Pancake Day
As it's pancake day, I thought I'd do a quick little post to share some inspiration for what to have with your pancakes! Now for me, it's all about dropped scones or American style pancakes (the thick cakey ones - I've never been a fan of crepes unfortunately), and these go so well with all sorts of toppings and fillings
Let's start simple with the classic combination of lemon and sugar, or if you wanted to mix it up a little, why not layer together your pancakes with lemon curd as well?
Other basic options include spreads like jam or nutella, and of course golden syrup is a must, or if you fancy throwing the boat out a bit, why not splurge on maple syrup?
For pudding you could even have ice cream, scooshy cream, sauces...just go all out

Or if you wanted to mix it up and go a bit 'healthier', why not layer some pancakes together with yoghurt and fruit? Berries and banana are especially popular but something more exotic like mango and passion fruit would be delicious as well!
If you're in to something a bit more savoury, bacon is always good with pancakes, of course, this is often paired with maple syrup but if that's not for you, just don't have it!
The possibilities are almost endless, you can have whatever you fancy, why not get a bit creative and you might discover a new favourite
You can't have toppings without pancakes though so here's the recipe I use. It's super easy if you don't already have one or maybe want to try something new! If
you'd like something a little more flavoursome, I like to add some
cinammon in with the flour and sugar, or you could mix some vanilla
extract or lemon juice in with the milk, or throw some chocolate chips in to the final batter, again, there are so many options!
Ingredients:
100g Self-raising Flour
60g Caster Sugar
Pinch of Salt
1 Egg
4 tbsp Milk
Sieve the flour, sugar and salt together, crack in the egg and mix together with a fork, then stir in the milk until you get a batter
Drop ladle fulls onto a greased frying pan over a medium heat until the surface begins to bubble
Flip and continue to cook until the underside is lightly browned and serve
