Mango Chicken (Super Simple!)

Three posts and a two month hiatus was called for...apparently.  I honestly don't know where the time has gone, I kept waiting for good lighting to take some photos, then exams were upon me and now here we are.  For the record, I still have an exam to go but what's life without a bit of pracrastination?

Today, I'm going to be telling you how to make mango chicken which is a really easy but super tasty recipe that is a fantastic mid-week meal idea.  It's pretty healthy and balanced too apart from the probably sugar laden chutney.

So without further ado, let's go!




You will need:

1 large or 2 medium Chicken Breasts sliced
2 cloves of Garlic
1 red Chilli (optional)
1 tsp ground Cumin
1 tsp ground Coriander
Ground Black Pepper
1 Mango cubed
3 tbsp Mango Chutney

Pitta Breads and salad to serve 

Serves 2


Cook the chicken with the garlic, and the chilli if you're using it, in a little bit of oil until the chicken is cooked through

Coat in the cumin, coriander and pepper and leave to cook for roughly a minute

Then add the mango and mix it all until everything is coated in the spices and leave for another minute

Finally, coat everything in the mango chutney and cook until everything is nice and sticky
(if you're serving it in pitta breads, pop these in the toaster once you've added the chutney and that's a pretty good measure of the time you'll need)

Serve in pittas with your choice of salad
